Summer time... and Dinner

As recent photos indicate, summer is upon us here in the North West. I love summer. Although I'm sort of a pansy about the heat, I love flip flops and tank tops, getting a tan, and yummy summer fruits and veggies.

...but the heat leaves me stumped at dinner time. My appetite changes. I don't want as much food, and I certainly don't want to eat the 'heavier' dishes that come to mind when I think of cooking.

When it's really hot, I'd rather eat a bowl of watermelon.

So that's where you come in!

What are you favorite hot-weather meals? Do you grill? Make cold sandwiches and salads? ...is there some sort of summer dinner underground that I don't know about?

Help! Please? Ryan's stomach depends on y.o.u.! (Just kidding. I'd probably feed him even if no one responded...) So leave me a link, a recipe, and idea... whatever!

I Love, Love, LOVE Cold-Boiled-Chicken-Salad: cooled boiled chicken, rice, lettuce, peppers, cooled boiled egg, mustard, almond slivers, and a tiny bit of mayo. Salt and pepper to taste, and I could eat that stuff all summer long. It's delightful.

I had the same problem last night!! So I made a salad that when I actually counted it out, isn't too bad for you either! Here's what's in it:
Cabbage chopped up (half or whole...depending on how much you want)
Frozen peas, defrosted, but not warm
Crushed peanuts
Sunflower seeds
Crushed up oriental Ramen
Can of shrimp (or tuna, chicken, turkey...whatever)

Dressing is as follows:
2/3 c olive oil
1/4 c apple cider vinegar
Oriental ramen flavor pack

I only used a little more than half of the dressing myself. It's yummy, reasonably fast, and great for a hot summer day!!! Plus you can totally add or subtract ingredients to make it your own. Also a great picnic/pot luck option!

I'm also a big fan of Chicken Salad, and I also love Pimento Cheese sandwiches or you can put either on Ritz crackers. Oh, and lots of fruit!

Ok... Here are two things that I've done in the past couple of weeks. First of all, I have recreated the "Topopo Salad" from El Sarape.
*Boil chicken breasts (I do two)
*Crunch up (not crush..) tortilla chips
*Top Chips with slightly warm refried beans (I use fat free refried BLACK beans) This is a little tricky, btw. Sometimes I just "glob" the beans on.
*Chop up a head of Romaine lettuce and stack on top of chip/bean situation.
*Shred the chicken over the lettuce, top with mozzarella (they use a different cheese in the original)
*Top the Kraft Italian dressing (not the creamy kind.)

This recipe is SO good! Brandon and I love it. It's super filling too, even if you don't use that many beans.

Also, I bought pork tenderloin on sale and bought a bottle of teriyaki sauce and doctored it up with grating ginger root & garlic cloves into the marinade as well as dicing up red onion. I let the meat marinade in a ziplock for 3 hours and then BBQ. I constantly baste the meat with the marinade while turning the meat every five minutes. You could bake it too, I just didn't want to heat the house up. Plus, the BBQ left the outside nice and crisp while the inside was super tender. Serve with grilled pineapple and a cold salad! Yum O!

LOTS of grilled meats with corn on the cob. We are also a big watermelon and cantalope household :) I have also made a whole turkey, shredded it, let it soak in chicken stock in a crock pot and we had shredded turkey on buns off and on for a couple days...SO NUMMY!

Here's our menu for this week:
1-Hamburgers (on the grill) slaw, chips
2-Rotissarie chicken (pre-cooked) mac/cheese
3-Chicken salad sandwiches (leftover from the night before)
4-Tuna salad made w/macaroni and celery
5- Pasta salad with ham
6- Hot dogs, corn on the cob
7- Clean out the fridge night
Leave for Walt Disney World where food will be prepared and served to me for a week!!!!!
